Step One: Heat a pan on medium heat and add ghee and oil to the pan. Add bay leaves, cardamom and cinnamon sticks to the pan and leave it for 4-5 seconds to sizzle. Add pieces of chicken to the pan and fry the chicken on both sides for 2-3 minutes each.

Melt ghee over medium heat in large heavy based pot. Add cinnamon, cardamom and cloves and cook for one minute. Add onion and cook for 7 minutes, stirring frequently, until pieces are golden and starting the brown on the edges. Add the garlic and ginger, cook for another minute. Stir in the Spices, cook for 30 seconds.

Method. Heat the oil in a wide, non-stick saucepan over a high heat. Add the chicken, skin-side down, and brown gently for 5-6 minutes. Turn the chicken over and cook for 4-5 minutes until sealed.

2 bay leaves. 4-5 Kashmiri dry red chilies. 1 teaspoon cumin seeds. and let them crackle for 4-5 seconds. Add 2 pounds (1 kg) skinless bone-in chicken (cut into 1 and ½ inch pieces) and cook for 5-6 minutes. Now add yogurt mixture and saffron soaked in milk and mix well. Add a cup of hot water and mix well.

Sear the chicken. Season the chicken with 1-1/2 teaspoons sea salt and the ground black pepper. Melt the ghee in a large, heavy-bottomed skillet over medium-high heat. Add the chicken to the skillet and brown for 2 minutes. Flip and brown for an additional 2 minutes. Remove from the skillet and set aside.

Method. Heat a couple of tablespoons of oil in a large frying pan (with a matching lid) on low heat. Add the chopped onions, garlic and ginger and saute for 4-5 minutes, until the onions soften.

Cook for 5 minutes until the onion is soft. Stir in the ground spices and cook for 2 minutes. Add the chicken and cook for 4-5 minutes until changed colour. Pour in the passata, chicken stock, tomato puree, and sprinkle in the sugar, salt, and pepper. Put a lid on the pan and simmer on low for 30 minutes.
